Raw Caramel Slices - Healthy and delicious

Raw caramel slices refer to a no-bake, vegan, gluten and sugar-free treat you can make at any time. All of its ingredients are natural and very beneficial for your health, not to mention it’s delicious, combining an array of tasty and nutritious ingredients. 

You can make it to take a few slices to work or even to birthday parties to surprise your friends and co-worker. It combines the exciting flavours of caramel, chocolate and cookie dough, so if you have a sweet tooth or just want to try a new and fun recipe try making raw caramel slices. It can satisfy any sweet cravings. 

Here is how you can make it:

Ingredients

Cookie Dough Base

  • 2/3 cup of gluten-free oats
  • 2/3 cup of coconut flakes
  • 1 cup of cashews (soaked for at least 4 hours)
  • 4 dates (pitted and soaked in warm water)
  • ¼ teaspoon of salt

Caramel Filling

  • 1/3 cup of almond butter
  • 1 teaspoon of melted coconut oil
  • 2 teaspoons of maple syrup
  • 1 cup of pitted dates
  • ¼ teaspoon of salt
  • 1 teaspoon of vanilla extract (optional)

Chocolate Topping

  • ¼ cup of cacao powder
  • ¼ cup of coconut oil
  • ¼ maple syrup
  • ½ teaspoon of vanilla extract (optional)

For the making of this recipe, you will also need a baking pan (a loaf pan or a 20cmX20cm pan), a double boiler (or if you don’t have one, you can use a saucepan and a large heatproof mixing bowl as an alternative)and a blender.

Add the soaked oats, the coconut flakes, the cashews and the salt in the blender and blend them until they are all finely chopped. Then add the 4 soaked dates and blend again until the mixture is sticky. If the mixture is not sticky enough add one teaspoon of warm water and mix again. Add non-stick parchment paper to the bottom of your baking pan and spread your dough evenly. Cover with aluminium and place the pan in the freezer while you prepare the rest of the recipe.

Add almond butter, melted coconut oil, vanilla extract, maple syrup, 15 pitted dates and salt to your blender and blend until all the ingredients are smooth. Once again if the outcome isn’t sticking add 1 teaspoon of warm water and blend. Spread the caramel filling on top of the cookie dough base in the pan, cover, and put back in the freezer.

Melt your cacao powder, coconut oil, maple syrup and vanilla extract in the double boiler (or using the other method mentioned above) until all the ingredient melt and become smooth. Add the mixture in your pan and pop back in the freezer for 4-6 hours until it sets.

After the recipe sets, take the pan out of the freezer and cut slices with a knife.
