In case you’re wondering how to make vegan brownies fudgy, we used flaxseed meal for that. You can replace flaxseed with cornstarch. If you do, make sure the two tablespoons needed to be loosely full in order to avoid making your brownies too doughy.

How to make vegan brownies

Vegan Brownies

Ingredients

1 cup  spelt flour

1 cup unsweetened cacao powder

1/2 tsp baking powder

1/2 cup  coconut sugar

1/3 cup  refined sugar

2 tbsp  flaxseed meal

1 cup coconut milk

3/4 cup oil

1 tbsp pure vanilla extract

2/3 cup chocolate chips for extra fudginess

a pinch of salt

Instructions

Preheat your oven at 165°C.

Add all dry ingredients, except for flaxseed meal, in a big bowl and mix well. 

In another bowl combine milk, oil, vanilla extract and flaxseed and whisk really well. Once your wet ingredients are well incorporated with flaxseed meal, mix wet with dry ingredients and whisk until the mixture is combined, no lumps should be seen.

Organic Vegan Brownies

Grab a sheet of parchment paper and cover your square pan. Add your mixture on top of the parchment paper and pop into preheated oven. Bake for 15-16 minutes, the mixture should be nice and moist. It might look underdone but that’s what we want. Once cooled down pop your brownies in your fridge and allow it to firm an hour. Additionally you can throw some chocolate chips on top of your brownies.
