What is Tigernut Flour

Tigernut flour is derived from the acclaimed superfood alternately called tigernut, nut grass, yellow nuts edge or edible galingale. Tigernut is a tuber that grows from the chufa sedge plant.

Tigernut Flour Recipe - Chocolate Chip Cookie

Makes 12 cookies

Ingredients 

  • cup of coconut sugar or cane sugar
  • ¼ cup melted butter
  • 2 tsp vanilla extract 
  • 1 egg
  • 160 grams of tigernut flour
  • ¼ tsp of sea salt
  • ¼ cup of dark chocolate chips 
  • ¼ tsp of baking soda

Method 

  • Use a medium sized bowl to whisk sugar, melted butter, vanilla extract and egg together.

  • Then add flour, sea salt and baking soda. Stir until combined. Then fold in the chocolate chips.

  • Place the mixture in the fridge for an hour and allow to cool.

  • Line a baking tray with greased paper and preheat oven to 180 C.

  • Remove the mixture from the fridge and scoop out 12 evenly sized dough balls and place the m on the baking tray.

  • Slightly flatten the balls and add a few more chocolate bits to the top of each cookie.

  • Place the baking tray in the oven and allow the cookies to bake for between 12 and 15 minutes. 

  • Once removed from the oven, allow the cookies to cool on the tray for ten minutes before transferring them to a wire rack.

  • Allow to cool completely before eating.

  • The cookies can be stored for 2-4 days in a cool airtight container.
