What is Puffed Brown Rice?

  1. Place 1 cup of brown rice in a saucepan containing two cups of water. Bring the mixture to the boil and then lower the temperature and allow the rice to cook for about twenty five minutes.

  2. Lightly grease a cooking tray and put to one side.

  3. Once the rice is cooked, evenly spread it around the cooking tray. Then heat the oven to 135 degrees Celsius and place the cooking tray in the oven.

  4. Allow the rice to bake for two hours.

  5. Remove the rice from the oven and allow it to cool.

  6. The rice should have separated into little clumps. Break these clumps into smaller pieces that are at least bite size.

  7. To get the puffed up texture you then need to fry the rice in oil. Add about an inch of cooking oil to a saucepan and then bring the oil to a temperature of around 190 degrees celsius. 

  8. When the oil is hot enough, carefully put the rice pieces into the oil and allow to fry for around one minute.

  9. Once puffy, remove the rice from the oil and place on a paper towel to dry.

  10. Add salt according to taste.

How do you make Puffed Brown Rice?

The only way to make puffed rice at home is to use the above method using oil. Of course, it would be healthier to make the puffed rice without oil, but there is no practical or safe way to do so without being able to access commercial puffing machines. A popcorn machine will not do the job.
