What is Vegan Granola?

At first glance, most granola cereals would appear to be vegan. However, a lot of off the shelf granolas contain ingredients that are considered to be non-vegan. Some examples of these ingredients are honey, which is deemed by many strict vegans to be non-vegan, and chocolate although dairy-free chocolate is quite acceptable.

Ingredients:

  • ⅓ of a cup of maple syrup

  • 2 Tbsp of melted coconut oil

  • 2 Tsp vanilla

  • 2 tbsp nut butter

  • 3 cups of certified gluten-free rolled oats

  • 1 cup of raw almonds (chopped)

  • 1/2 cup of raw walnuts (chopped)

  • 1/2 cup of raw unsalted sunflower seeds

  • 1/2 cup of raw sesame seeds

  • 1/2 cup of raw pumpkin seeds

  • 2 Tbsp of coconut flakes

  • 1 tsp of cinnamon

  • Pinch of nutmeg

  • 2/3 cup of dried fruit,

Method: 

Preheat the oven to 160C.

  1. Whisk the nut butter, vanilla, maple syrup, and coconut oil. To ensure that they combine well, it may be necessary to gently heat the mixture.

  2. Combine the gluten-free oats, nuts, seeds, coconut flakes, nutmeg, and cinnamon in a large bowl.

  3. Pour the maple syrup mixture over the dry mixture. Mix until all ingredients are coated evenly.

  4. Spread the sugar-free granola mix onto a baking tray lined with greaseproof paper. Bake until golden brown for between half and three-quarters of an hour, pausing to stir every 10 minutes.

  5. Remove from the oven when golden brown, and allow to cool for 20 minutes. Add the dried fruit, then store it in an airtight container. The granola will keep for a month if refrigerated.
