Vegan Mac and Cheese – Creamy and Yummy
Just like the real thing, Vegan Mac and Cheese can be creamy and delicious. You just don’t harm any animals in the process! Being dairy-free and guilt-free, this recipe is great for your family as well. Hide a few veggies in the vegan cheese sauce and get your children have their 5 servings a day and enjoy them at the same time.
You choose what kind of pasta to include; we suggest trying out our Lentil & Quinoa Penne to enhance the flavour of the cheese sauce and benefit from their nutrients. Otherwise, grab a regular pack of elbow pasta. We are sure you will enjoy them either way.
The recipe below calls for a vegan cheese sauce that can be substituted for a regular cheese flavour and be used in vegan recipes. Add as much seasoning as you would like and make it as spicy or pleasing to your taste buds as you would like.

Ingredients
1/2 cup cashews
1/4 cup nutritional yeast
1 tsp apple cider vinegar
1/2 cup water
2 tsp coconut oil
1 tsp salt
½ tsp pepper
Pinch of onion powder
Pinch of ground nutmeg
3 servings of Lentil & Quinoa Penne (or your choice of pasta)
Instructions
How to make Vegan Cheese Sauce
Add cashews in a bowl and let them soak in water for 2-6 hours. Once done, drain them completely and move cashews in a blender or food processor. Add the rest of the ingredients in the blender bowl and mix until well incorporated and into a smooth sauce. Move mixture into a saucepan and warm up over medium heat until bubbly, keep stirring to avoid sticking on the bottom of the pan.
Pasta
Boil pasta until cooked.
Once both sauce and pasta are done, incorporate the two and serve. Enjoy!
You can add some vegan cheese on top and pop them in the over, until the top has a nice golden-brown colour.
