Best Vegan Chocolate Chip Cookies recipe

Ingredients

1 cup  spelt flour

1/2 tsp  baking soda

1/4 cup refined sugar + 1/4 cup  coconut sugar

1/3 cup cacao nibs or chocolate chips

2 tbsp  coconut milk (you can add more if not desired dough thickness)

2 tbsp coconut oil

1/4 tsp pure vanilla extract

a pinch of salt

Instructions

Preheat the oven at 160° Celsius.

Add all dry ingredients in a big bowl. Mix until well incorporated.

Mix together all wet ingredients in a different bowl and combine into the dry ones. Stir well until you get a thick dough. Pop vegan cookies dough into the freezer for 10-15 minutes or until it is chilled.

Once dough is chilled, either get an ice cream scoop and form balls or grab some of it and form into balls with your hands.

Chocolate Chip Cookies recipe

Use a cookie sheet and place in the middle of your oven. Leave enough space in between balls for them to spread while cooking.

Bake for 10-12 minutes, you want the cookies to look under-cooked so don’t be alarmed if not firm. Just let them firm up for 10 minutes on a cooling rack.

Enjoy with a cup of coconut milk or by themselves as an afternoon snack.
