Ingredients
1 1/2 cups white spelt flour
1 1/2 tbsps. baking powder
3 tbsps. organic sugar
A pinch of salt
1 1/2 cups coconut milk
3 tbsps. organic coconut oil
coconut oil for pan
Optional toppings - Chia seeds, fresh blueberries and bananas, maple syrup
How to make vegan pancakes
Add all dry ingredients (flour, baking powder, sugar and salt) in a large bowl and mix them well.
Combine all wet ingredients (coconut milk and coconut oil) and slowly incorporate them in the dry ones. Mix well until all ingredients form a thick batter. If batter is too thick, add some more coconut milk.
Let the batter rest for 5 minutes to rise.
Melt some coconut oil in a frying pan and spread it all over the pan.
Add the batter in the pan and let it cook until you can see bubbles at the top. Once bubbly, turn the pancake around and let it cook. Each side will take around five minutes to cook.
Serve them with fresh fruit or drizzle with some yummy maple syrup.
